Based in Main Beach at Australia’s only Theme Park Accommodation Provider, Sea World Resort, you’ll play a key role in managing the daily operations of our kitchen. You’ll lead and inspire a talented team of Chefs, Cooks, and Apprentices to deliver exceptional dining experiences for our guests — all while maintaining high standards of quality, safety, and efficiency within budget.
Our talented Kitchen team operates a variety of kitchens throughout the resort, including the large main production kitchen, a busy conference & events space for large groups, and various restaurant kitchens, to create high quality dishes for our guests.
What you’ll do:
- Lead, motivate, and support the kitchen team to maintain a positive and high-performing environment
- Oversee daily food production, presentation, and hygiene to ensure consistency and quality
- Create and deliver innovative menus that reflect current food trends and delight our guests
- Train, mentor, and support team members, including recruitment and performance management
- Conduct regular team briefings and assist with rostering and record keeping through UKGPro and SAP
- Monitor compliance with HACCP, hygiene, and safety standards across all kitchen operations
What we’re looking for:
- Minimum 2 years’ experience as a Junior Sous Chef or Senior Chef de Partie in a high-volume environment
- Previous experience in an international hotel or resort (minimum 2 years)
- Strong background in both à la carte and buffet service
- Proven ability to lead, mentor, and develop a team
- Solid knowledge of HACCP and food safety standards
- Excellent organisational and multitasking skills
- Creativity, enthusiasm, and genuine passion for food
- Certificate III in Commercial Cookery or equivalent qualification
